Happy New Year!
So, here we go. On the first day of this journey of mine and this morning was, well…. disappointing at first. I got up to set forth on my quest to eating better and low carb and this consisted of some Cinnamon Vanilla Pancakes, 2 eggs and 3 slices of bacon. With a drink of tea and 1/2 and 1/2. Sounds great right?
Well I think I did something really wrong with the pancake mix. I put the mixture on the griddle and it did nothing! Not cooking at all. So I turned it up from 300 degrees to 350 degrees…. still nothing. Those pancakes had to have been sitting there for at least 8-10 minutes and they were not flippable. So I put the heat up to the max on the griddle of 400 degrees. Still not cooking.
So I ended up taking what I had left of the batter and put in in a pan on my oven – they cooked up but they were almost too greasy. I think it may have been the coconut oil I used since I was out of spray.
At the end of it all I ended up scrapping the pancakes. I was disappointed and that was an understatement. Grrr. I had my bacon and eggs and a cup of tea. I had wanted to go to watch the polar bear swim this morning, but with the debacle that was my pancakes it took too long and we weren’t able to make it. So, instead we went down to the beach, took some pictures and then went on a bit of a nature walk – I have to admit it was better than the polar bear swim (we’ll save that for next year!).

|Dessert: Chocolate Hazelnut Mug Cake – Low Carb and Gluten-Free||5.5|
Today wasn’t so bad, I found the Chocolate Hazelnut Mug Cake was super filling and instead of hazelnuts I used walnuts… it was still good but I had to add a bit more sweetner for it to taste alright. Topped it off with a blob of cool whip and it took care of that sweet tooth.
Of course I’m still obsessing about food….
…. wanting to eat something
…. but I’m going to focus on having this glass of water
